SoulBlazer:
Master's Theme
Lonely Town
Underground Castle?
Southera
St. Elle's
Not in any particular order, the rest of soundtrack is awesome too.

also:
Srickerbrush Symphony -DKC2; (All DK and Zelda Music)

Fever -Dr. Mario

Also my bud transcribes videogame music into sheet music. Here's his site: http://diricos.webs.com/sheetmusic.htm. lots of Final Fantasy and Zelda, but some other good ones too. I think he takes requests; he needs a midi, and I don't know how quick he is, but I think the sheets are accurate.

I've been on a roll with the Castle Crashers and Super Mario 64 soundtracks lately. I'm also looking for a way to obtain the Donkey Kong 64 soundtrack, since I can't find it anywhere.

Some of my favorites are the Forest Entrance (CC), Water Theme (SM64), and the Necromancer Boss Theme (CC).

I'm a little surprised no on has mentioned Super Mario RPG.

Fight Against Monsters

Fight Against a Stronger Monster

Fight Against an Armed Boss

Forest Maze

Booster's Theme

Barrel Volcano

Those are easily my favorites. I would listen to them in my car or something. Here's some other memorable ones:

I've been playing Rez on the XBLA lately, and it has one of the coolest soundtracks I've ever heard. The track from the last level friggin' rocks:

"Mind Killer"

Played through the Earthworm Jim games a bit recently and remembered how great the music was.

Subterranean
Tangerine
Falling

And also, I'll throw out that No More Heroes has a pretty awesome soundtrack. It and it's sequel have some of the best game music I've heard in a while.

N.M.H.
We Are Finally Cowboys
Gene's Rock-a-Bye (from God Hand and not NMH, but it's the same composer.)

If we're talking original soundtracks, then:

Out of nostalgia, i'd add the Mobil 1 Rally Championship soundtrack as well.
The Tank-O-Box (couldn't find a link, sorry) and Brave Dwarves 2 setlists are pretty neat too.
Other than that, maybe the Minecraft & Terraria OSTs

As far as licensed soundtracks go, Grand Theft Auto, FlatOut, BurnOut, Guitar Hero, Need For Speed and Tony Hawk's series make up the vast majority of my favorite songs.
