I don't know about the new GHWT instruments, but the Rock Band instruments use the USB ports, so the PS2 bundle actually came with a USB hub for connecting all the instruments at once.

For your last question, there is of course a thing you can buy, were you just plug it in the PS2 and you can plug 6 more controllers (ithink) into it.
