I know certain midi programs are capable of creating triplets... is it possible with any of our basic programs? (Midi Maestro, Tabit, Anvil...?)

You could probably cheat it with Anvil if you divide the measures into a bagillion little pieces... but still, what method do you all find best? do you just switch the measure into 6/4 or something?

Yes.

lol Care to elaborate? I can't figure out how to do it, even though MM definitely seems to have a triplet button (the little 3)

To do it in TabIt, highlight the section that has triplets (it has to be divisible by 2 meaning an even number of beats) and press CTRL+W and select the triplet option and tab away.
