I'm just curious... would Finale work for making Midi's? It's quite the comprehensive music program, and it's not hard to learn. I've already got it installed on my computer, but I am unaware of the limitations of the program. Would it be suitable for making tabs for GH?

It would work to create the MIDIs but from the one test I made on it, the time signatures and tempo changes don't register over to GHEx so you'll need to make those, still, with Midi Maestro.

After you create a chart with Finale, import into Anvil to make sure it doesn't create any unwanted tracks/events.
