I've never actually learned a full song by ear, but the way I learn any old part of a song is to listen to them over and over until I can accurately hum them. Once I can do that, I try to match my humming on my keyboard; after that I transfer it to guitar. I learned Für Elise and Don't Stop Believin' on piano this way; I learned Free Bird on guitar this way. I can play the full guitar solo on piano (ironically ), most of it learned by ear and just sticking to the familiar notes used in the solo (C, D, F, G, Bb are really common, especially in the faster parts)... that's another thing: if I learn the key signature of a song, I can usually just mess around in that scale until I stumble upon an actual part of the song.
Occasionally, I have learned some riffs by randomly messing around on my guitar and playing part of the riff, then matching the rest, and one time I learned a whole new riff just by playing a different one by accident. _________________

hmmmm. that's interesting. With this one I just watched the video over and over listening to the music and trying to picture it in my head. _________________

I figure out the key. Then I find out what scale it's based around. In rock music it is usually the minor pentatonic. That's pretty much as far as you can get before you really have to critically listen.
After that I look up the tab.  _________________

This is basically how it should be done, unless you're experienced enough to... just figure it out. But that takes a while of playing... _________________
